What Is a Sterilization Retort?

A sterilization retort is a pressure-rated thermal processing vessel used to sterilize packaged food after filling and sealing.
During the process, the packaged products are loaded into the retort chamber. The machine then follows a controlled sterilization cycle involving heating, holding and cooling.
For low-acid foods, retort processing commonly uses temperatures around 121°C, with the actual temperature, pressure, holding time and required lethality determined by the product, package geometry and validated thermal process.

Typical Retort Sterilization Process
Loading → Heating → Sterilization Holding → Cooling → Pressure Release → Unloading
Temperature and pressure are monitored throughout the process to help achieve repeatable sterilization conditions.

Types of Retort Sterilizers
There is many retort types. Which Retort Is Right for Your Product? Check the comparison table below. You will find the answer.
| Retort Type | Heating Medium | Product Movement | Best For | Main Advantage |
|---|---|---|---|---|
| Water Spray Retort | Hot water sprayed over products | Static | Pouches, trays, cans, bottles | Good temperature uniformity, low water volume |
| Water Immersion Retort | Products fully immersed in hot water | Static | Pouches, cans, jars | Excellent heat transfer and gentle processing |
| Rotary Retort | Usually water/steam-water | Rotating | Cans, bottles, pouches | Faster heat penetration for some products |
| Pilot Retort | Depends on configuration | Usually static/small-scale movement | R&D, testing, new products | Small batch testing before commercial production |
| Steam-Air Retort | Steam + compressed air | Static | Pouches, trays, plastic containers | Good for flexible packaging; precise pressure control |
| Shaking Retort | Usually water spray/steam-water | Shaking/reciprocating | Viscous foods, pouches, ready meals | Accelerates heat penetration and mixing |

Sterilization Retort for Retort Pouches
During high-temperature sterilization, the gas inside the pouch expands and the food volume may increase, causing the internal pressure of the pouch to rise. If the pressure difference between the inside of the pouch and the retort chamber becomes too large, the pouch may deform or even rupture.
To protect retort pouches during sterilization, the retort uses pressurized sterilization and pressurized cooling. This keeps the pressure inside and outside the pouch balanced, helping prevent pouch rupture and reduce packaging failures.
